Mixing is where all the seperate individual tracks [each drum, guitar etc.] are looked at, fixed up and mixed together so they're balanced and any effects and stuff are added. Then you bounce that down to a stereo wav file and master it which basically involves trimming the track so you don't have loads of silence at the beginning/end of the song, fixing the EQ and using a limiter on it etc...
